I stopped by the dock in Seldovia, AK when I heard the halibut charter was in. I had not seen full size halibut fish before and wanted to see their size and watch the filleting process. The fish below are 5-7 years old and weigh around 65 pounds each. The man doing the processing is a total pro who had been filleting fish for over forty years. Watch how smooth he is with a razor sharp knife and how he almost stabs the guy to his right.
